Recipe for cherry pie

Ingredients for this cherry pie recipe
- 4 tablespoons of fruity olive oil
- 25g hazelnut powder
- 25g almond powder
- 3 eggs
- 35g flour + 25g for the pistachio cream
- 120g icing sugar
- 25 cl of milk
- 35g powdered sugar
- 65g pistachio paste
- 50g of liquid cream
- 10g of crushed pistachios
- About 200g of cherries
Preparation
Preheat the oven to 200°C.
Separate the egg whites from the yolks.
In a bowl, add the egg whites, olive oil, almond and hazelnut powders and powdered sugar.
Gradually add 35g of flour and mix with a whisk until you obtain a smooth dough. Butter a pie dish, pour in the dough and bake for 20 minutes.
In a separate bowl, whisk together the egg yolks and sugar and add the remaining flour (25g). In a saucepan, add the milk and pistachio cream and bring to a boil.
Then pour half of the milk and pistachio cream into the mixture, whisking vigorously.
Pour the contents of the bowl into the saucepan with the remaining hot milk and pistachio cream and return the pan to the heat. Whisk quickly until the mixture thickens and cook for about 3 minutes.
Then place your mixture in a container and set it aside in the refrigerator for at least 15 minutes.
In another bowl, add the liquid cream, a little sugar and whip the cream.
Cover your pastry with about a centimeter of pistachio pastry cream. Cut your cherries in half and place them on the cream.
Finally, sprinkle your pie with crushed pistachios. Serve a piece of pie with a spoonful of the whipped cream prepared beforehand. Pair this recipe for cherry pie with a cup of tea for a great dessert or snack!
