Homemade tortellini recipe
This homemade tortellini recipe will remind you of delicious Mediterranean flavours and will satisfy you a lot.

Watch out! To make this recipe, you will need a rolling machine (pasta machine).
Cheese cubes of your choice
300g flour
3 eggs
1 tablespoon extra virgin olive oil
A knob of butter
Salt, pepper
Preparation:
To make this homemade tortellini recipe, mix the flour and a pinch of salt in a bowl. Add the eggs and mix. Add the extra virgin olive oil to soften the dough and mix well. Then form a ball with the dough, wrap it in plastic wrap or a cloth and leave it to rest for 30 minutes at room temperature.
During this time, dice the cheese of your choice.
Then, take some pieces of pasta and put them through the rolling machine to obtain a very fine paste. To prevent the dough from getting stuck, flour both sides of the dough between each pass and then remove the excess flour.
To make tortellini, cut out circles of dough using a pastry cutter or an inverted glass. Add the diced cheese at the bottom of the circle. Fold the whole thing in half and you will get a croissant shape. Take the croissant in your hand, keeping the rounded side at the top between your fingers. Fold the rounded part over itself and pinch the ends together to make tightly sealed tortellini. This will prevent the stuffing from escaping during cooking.
Then heat a pot of water and add salt. When the water boils, add the tortellini. When they rise to the surface of the water, cook for another 1 minute and drain your tortellini.
